The Big Tomato Freeze!

Was it just me or has the summer of 2014 been a bumper year for tomatoes?  My little greenhouse here in rural Cornwall has produced pound after pound; in fact I’d go as far as to say I’ve been over run with ’em!

Who would have thought a free packet of tomato seeds attached to a bottle of Heinz Tomato Ketchup would have produced a massive glut of beautiful ruby red toms?!

Everyone who’s been to visit me recently has been sent home with a tommy goody bag and yet –  I still have a fridge full!

I can’t abide the thought of waste so the idea occurred to me – can you freeze tomatoes?

Time to experiment And surprisingly the answer is yes!

After defrosting the fruit is watery and mushy, but still perfect for adding to a Bolognese or chilli sauce or for making soups or sauces.

A bit like Forrest Gump’s very good friend Bubba when he was explaining about shrimp – I’ve boiled ’em, fried ’em, sautéed ’em and so on and so on…….and I’m still looking for ways to enjoy ’em!!

So I’ll leave you with a conundrum – if tomato is a fruit, is ketchup a jam?
